Buying Sevruga caviar

Sevruga has long been called the connoisseur's caviar. It comes from the Stellatus or starry sturgeon, Acipenser stellatus, the smallest of the three classic Caspian species. The eggs are smaller and softer than Beluga or Oscietra, but they carry more flavour: full, briny and distinctly marine. People who find Beluga too gentle often discover that Sevruga is the caviar they have been looking for. True Sevruga is genuinely hard to find. Because the Stellatus is a small fish, it is unattractive to farms that also sell sturgeon meat, and very few bother with it. Ours is real Acipenser stellatus from a relatively new farm in Romania, CITES certified, with better egg definition than most and a medium grey colour. When you buy Sevruga caviar online, check the species named on the tin, as that is the only reliable guide. Our Sevruga Caviar comes in 30g, 50g, 125g and 250g tins, starting at £47.50 for 30g.
