What is inside

- Oscietra: golden brown, nutty and long, from the same lovely Italian outdoor farm
- Sevruga: small, soft grey eggs with the boldest flavour of the three, farmed in Romania

Serving
- Bring the tins out about ten minutes beforehand and set them on crushed ice.
- Start with the Beluga, move on to the Oscietra and finish with the Sevruga.
- Use separate mother of pearl, horn or glass spoons for each caviar.
- Offer blinis, soured cream and a little chopped shallot, which suit the bolder Sevruga especially well.
- Ice-cold vodka or a dry Champagne at 7 to 9°C works with all three.
