Siberian sturgeon caviar comes from Acipenser baerii, often simply called Baerii. It is the best value sturgeon caviar we sell and our best seller, and it is where we suggest most people start. Our House Selection comes from the oldest outdoor, flow-through sturgeon farm in Italy, which first harvested in 1997. The label exists so that we can always offer the best caviar we can find at this price. The eggs are a similar size to Oscietra but darker, some edging towards black, with excellent definition. The flavour arrives at the front of the mouth straight away: clean, lightly salted and surprisingly complex, with notes of the sea and a citrus brightness. It is a superb canapé caviar, and just as good eaten slowly from a spoon. Price is a large part of the appeal. House Selection Siberian Caviar starts at £50 for 50g and runs to a 500g tin at £485, so you can afford to be generous at a party. It also features in the Best Sellers Caviar Taster Set with Royal Beluga and Oscietra, where it is the lightest of the three and should be tasted first, and in many of our gift sets with Champagne or Nemiroff vodka. For canapés, warm cocktail blinis in a low oven for a minute or two, add a small spoonful of crème fraîche and top with caviar just before serving. Keep the open tin over crushed ice while guests help themselves. Our House Champagne, fresh and fruity, is an easy and sensible partner, and ice-cold vodka works just as well.
Baerii is caviar from the Siberian sturgeon, Acipenser baerii. It has medium, dark grey to near black eggs and a clean, lightly salted flavour.
Good Siberian caviar is excellent, and ours comes from Italy's oldest outdoor flow-through farm. The eggs are well defined and the flavour is complex, with a citrus brightness, which is why it is our best seller.
Siberian caviar is usually the most affordable true sturgeon caviar. Our House Selection starts at £50 for 50g, well below Beluga or Oscietra for the same weight.
The eggs are similar in size, but Siberian is darker with a cleaner, brighter flavour. Oscietra is golden to brown and more nutty, with a longer finish.
Keep the tin on crushed ice and serve it on warm cocktail blinis with crème fraîche, topping them just before they go out. A 125g or 250g tin is the practical size for a crowd.
