Choosing a Champagne and caviar gift

Champagne and caviar is the classic pairing for good reason. The fine bubbles and crisp acidity of a good Champagne clean the palate between spoonfuls, so each mouthful tastes as fresh as the first. Our Champagne and caviar gift sets use three Champagnes, Pol Roger Brut Réserve, Dom Pérignon 2013 and our House Champagne, each matched with a caviar that suits it. Pol Roger, best known as Winston Churchill's favourite Champagne, is still family owned and blends equal parts Chardonnay, Pinot Noir and Pinot Meunier. In the Champagne & Caviar Gift Box it comes as a full bottle with Italian Oscietra in 30g, 50g or 125g. The Half Bottle Champagne & Oscietra Caviar Gift Box pairs a 37.5cl bottle with 30g or 50g, which is just right for two. Dom Pérignon 2013 is full, energetic and expressive, an even blend of Chardonnay and Pinot Noir. In the Dom Pérignon & Beluga Caviar Gift Box it is paired with Royal Beluga from 50g to 500g and two tins of Iain Burnett chocolates. How long should I chill Champagne before serving?
