Choosing Champagne and sweet wine

Our wine list is deliberately short. There are three Champagnes, each chosen to drink with caviar at a different price, and one Sauternes, chosen for foie gras. It means every bottle has a clear job, and you can buy Champagne online knowing it will suit the food it is going with. All are for adults aged 18 or over. Pol Roger Brut Réserve NV is consistently one of the best non-vintage Champagnes on the market. The house is still family owned and blends equal parts Chardonnay, Pinot Noir and Pinot Meunier with a high proportion of aged reserve wines. It costs £55 for a 75cl bottle or £29.50 for a 37.5cl half bottle, the right size with a 30g or 50g tin of caviar for two. Dom Pérignon Vintage 2013 is an even blend of Chardonnay and Pinot Noir, with white flowers and peach on the nose and a gentle smokiness on the palate, and a magnificent partner for Beluga. House Champagne Brut is aged three years in the family cellars and shows white fruits with a hint of redcurrant. At £29.50 for 75cl it is a fine Champagne for parties. Madame de Rayne Sauternes 2020 is made from Sémillon, Sauvignon Blanc and Muscadelle, with candied fruit, dried apricot, roast pineapple and honey, and touches of vanilla and saffron from oak. Drink it over the next two to three years with foie gras, puddings or blue cheese. Serve Champagne at 7 to 9°C and Sauternes well chilled, and store bottles lying down somewhere cool, dark and steady.

What is the difference between vintage and non-vintage Champagne?

Non-vintage Champagne, such as Pol Roger Brut Réserve, blends wines from several years for a consistent house style. Vintage Champagne, such as Dom Pérignon 2013, is made only from a single, declared year.

How long does Champagne last once opened?

With a good Champagne stopper in the fridge, an opened bottle keeps some of its fizz for a day or two. It is at its best on the day it is opened.

It is ready to drink now and best enjoyed over the next two to three years. Store it lying down somewhere cool and dark.
