Beluga caviar is the famous roe of the beluga sturgeon huso huso fish and is widely considered to be the best caviar in the UK (and world).

Beluga sturgeon caviar prices are determined by the size, age and quality of the fish when it is farmed. The sturgeon huso huso can take up to 20 years to reach maturity and is one of the largest fish in the world, offering the largest and best quality roe available from any fish.

The beluga sturgeon is primarily found in the Caspian Sea, which is bordered by Iran, Azerbaijan, Kazakhstan, Russia, and Turkmenistan. The sturgeon caviar you buy at Paragon Caviar, however, is sustainably farmed right here in the UK.

Sometimes, but thanks to modern harvesting technologies it is now possible to extract the sturgeon fish caviar without killing the fish, although the most common method is still to slaughter the sturgeon to preserve the best quality caviar from the matured female.

98% of all beluga caviar orders placed before 5PM will be delivered the next day in most areas of the UK. Orders placed after 5PM will usually be dispatched the following business day. For orders placed from some London postcodes, delivery will be made same-day.

Beluga Caviar pairs well with traditional accompaniments such as blinis, crème fraîche, and chopped egg whites and yolks, as well as other foods such as smoked salmon, smoked trout, and crudité.
