About House Selection Siberian Caviar (Baerii)
House Selection is the caviar we would happily eat every week. It is pure Siberian sturgeon caviar (Acipenser baerii) from the oldest outdoor, flow-through sturgeon farm in Italy, which first harvested in 1997. The label exists so that we can always offer the best caviar we can find at this price, and the current tin is the best yet.
The eggs are a similar size to Oscietra but darker, some edging towards black. Definition is excellent and the flavour hits the front of the mouth straight away: clean, lightly salted and surprisingly complex, with notes of the sea and a citrus brightness. It is a superb canapé caviar and just as good eaten slowly from the spoon. Best of all, at this price you can be generous with it.

Storage
- Into the fridge on arrival, on the coldest shelf at 0 to 4°C.
- Keep the tin sealed until you serve it.
- Once open, keep it chilled with the lid on and eat within 48 hours.
- For a party, open the 250g or 500g tins when guests arrive rather than portioning in advance.
- Do not freeze it.
Serving
- Serve lightly chilled: ten minutes out of the fridge, then onto crushed ice.
- Pile it onto blinis with crème fraîche for a drinks party, allowing 10 to 15g per guest for canapés.
- Fold it through buttery scrambled eggs off the heat, or spoon it over a soft-boiled egg.
- Use a mother of pearl or horn spoon to keep the bright, clean flavour intact.
- A crisp Champagne or chilled vodka suits its citrus note.
Ingredients and allergens
Sturgeon roe (fish), salt, E285 (borax). Borax is a traditional caviar salt that helps preservation and rounds out the flavour. Contains fish.

Delivery and returns
We aim to process and dispatch the majority of your caviar orders same-day when placed before 3PM Monday to Thursday, and 92% of them will be delivered on the next working day.
Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.

The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.
