Storage
- Refrigerate the jar as soon as it arrives; this is a semi-preserved product and must be kept chilled.
- Keep the Kilner jar sealed until you are ready to serve.
- After opening, press cling film onto the cut surface, keep it in the fridge and finish it soon.
- Avoid freezing, which spoils the silky texture.
Serving
- Take the jar out of the fridge about 20 minutes before serving.
- Slice with a thin knife dipped in hot water and wiped dry between cuts for clean slices.
- Allow 40 to 60g per person as a starter, so one jar serves three to four.
- Serve on lightly toasted brioche or sourdough with Sauternes jelly or fig chutney.
- A glass of sweet white wine such as Sauternes is the classic match, and it also makes an elegant light supper or canapé.
