There are some things the French simply do better than anyone, and foie gras and pudding wine are two of them. This set puts them together with a jar of Sauternes jelly for a classic, beautifully balanced gift.

Madame de Rayne 2020 Sauternes is a sweet wine from Sémillon, Sauvignon Blanc and Muscadelle with a luminous gold colour, aromas of candied fruit, dried apricot, roast pineapple and honey, and a lively acidity that keeps the richness in check. 14% ABV.
The black gift box closes with a magnetic seal, so the foie gras can be taken out and refrigerated on arrival and the gift put back together later.
Please refrigerate foie gras on arrival and take it out of the fridge about 20 minutes before serving.

Storage
- Lift the foie gras out of the box and put it in the fridge as soon as the parcel arrives.
- Keep the Kilner jar sealed and chilled at 0 to 4°C until the day you serve it, and check the date on the jar.
- Once opened, press cling film onto the cut surface, return it to the fridge and eat it promptly.
- The Sauternes jelly and the wine can stay in the box, which closes with a magnetic seal, somewhere cool and dark until needed.
- Store the half bottle lying down if you are keeping it for more than a few weeks.
Serving
- Take the foie gras out of the fridge about 20 minutes before serving so the flavour opens up and the texture softens.
- Slice with a thin knife dipped in hot water and wiped between cuts for clean, neat slices.
- The 180g jar gives four starter portions of around 45g each, served with lightly toasted brioche or country bread.
- Add a small spoonful of Sauternes jelly to each plate; its sweetness lifts the foie gras without masking it.
- Chill the Sauternes to about 8 to 10°C and pour it in small white wine glasses alongside.

Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.

The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.
