Storage
- Keep frozen at -18°C or below until needed.
- Take out only as many escalopes as you plan to cook and return the bag to the freezer straight away.
- Cook from frozen; there is no need to defrost.
- Do not refreeze escalopes that have thawed.
Serving
- Heat a dry frying pan until very hot; no oil is needed, as the foie gras releases its own fat.
- Sear each escalope for under a minute on each side until well browned.
- Season and serve immediately, while the outside is crisp and the centre melting.
- Lay each escalope on toasted brioche with a fruit sauce or a little Sauternes jelly.
- Allow one or two escalopes per person as a starter, so a bag serves ten to twenty.
Delivery and returns

Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.

The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.
