Madame de Rayne 2020 Sauternes is a sweet wine from Sémillon, Sauvignon Blanc and Muscadelle with a luminous gold colour, aromas of candied fruit, dried apricot, roast pineapple and honey, and a lively acidity that keeps the richness in check. 14% ABV.
The black gift box closes with a magnetic seal, so the foie gras can be taken out and refrigerated on arrival and the gift put back together later.
Please refrigerate foie gras on arrival and take it out of the fridge about 20 minutes before serving.

Storage
- Refrigerate the goose foie gras on arrival; the magnetic gift box opens easily so it can come straight out.
- Keep the jar unopened at 0 to 4°C and use it by the date shown on the label.
- After opening, cover the surface closely, keep it chilled and finish it soon.
- Store the Sauternes and the jelly in a cool, dark cupboard, with the bottle on its side if it is waiting a while.
Serving
- Allow around 20 minutes out of the fridge before serving; goose foie gras is firmer than duck and benefits from the extra time.
- Cut slices about 1cm thick using a warm, clean knife.
- Serve four people with toasted brioche, a few flakes of sea salt and a little Sauternes jelly on the side.
- Pour the Sauternes lightly chilled, at around 8 to 10°C, so its acidity cuts through the denser texture of goose.
- A spoonful of our fig chutney makes a good alternative accompaniment if you want a second condiment on the board.

Goose foie gras: goose foie gras, salt, Armagnac, pepper, sugar, antioxidant (E300), preservative (E250). Sauternes jelly: Sauternes (contains sulphites), sugar, gelling agent (pectin). Contains alcohol. Not for sale to anyone under 18.

Delivery and returns
We aim to process and dispatch the majority of your caviar orders same-day when placed before 3PM Monday to Thursday, and 92% of them will be delivered on the next working day.
Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.

The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.

What is the difference between goose and duck foie gras?
Goose foie gras is a little richer and denser than duck, with a finer, more delicate finish. Duck tends to be slightly more robust in flavour.
