Madame de Rayne 2020 Sauternes is a sweet wine from Sémillon, Sauvignon Blanc and Muscadelle with a luminous gold colour, aromas of candied fruit, dried apricot, roast pineapple and honey, and a lively acidity that keeps the richness in check. 14% ABV.
The black gift box closes with a magnetic seal, so the foie gras can be taken out and refrigerated on arrival and the gift put back together later.
Please refrigerate foie gras on arrival and take it out of the fridge about 20 minutes before serving.

Storage
- There are four foie gras items in this set; refrigerate all of them as soon as it arrives.
- Keep the jars and tins sealed at 0 to 4°C and use them in order of the dates on each label.
- Open one item at a time and keep the rest sealed, wrapping any cut foie gras closely and eating it soon.
- The fig confit, Sauternes jelly and Sauternes can be kept in a cool, dark cupboard until opened.
- Refrigerate the jelly and confit once opened.
Serving
- Take each foie gras out of the fridge about 20 minutes before serving.
- For a tasting, plate a slice of duck and goose entier side by side with a little bloc, so guests can compare texture and richness.
- Serve Sauternes jelly with the duck and the fig confit with the goose, or offer both and let people choose.
- With 620g of foie gras in the box, there is enough for around twelve starter portions over one or several occasions.
- Chill the Sauternes to 8 to 10°C, and keep warm brioche or thin toasts coming.

Delivery and returns
We aim to process and dispatch the majority of your caviar orders same-day when placed before 3PM Monday to Thursday, and 92% of them will be delivered on the next working day.
Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.
Delivery Methods & Costs
The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.
