Madame de Rayne 2020 Sauternes is a sweet wine from Sémillon, Sauvignon Blanc and Muscadelle with a luminous gold colour, aromas of candied fruit, dried apricot, roast pineapple and honey, and a lively acidity that keeps the richness in check. 14% ABV.
The black gift box closes with a magnetic seal, so the foie gras can be taken out and refrigerated on arrival and the gift put back together later.
Please refrigerate foie gras on arrival and take it out of the fridge about 20 minutes before serving.

Storage
- Refrigerate the four foie gras items as soon as the box is delivered.
- Keep the foie gras sealed at 0 to 4°C and use each by the date on its label.
- Store the foie gras sauce as directed on its jar, and refrigerate it once opened.
- Keep the jelly, fig confit and Sauternes cool and dark, chilling the condiments after opening.
- Wrap any opened foie gras tightly and finish it promptly.
Serving
- Bring the entier and bloc out of the fridge about 20 minutes before serving them cold.
- Warm the foie gras sauce gently and spoon it over a pan-roasted fillet of beef, roast chicken or a bowl of fresh pasta.
- Serve the cold foie gras with toasted brioche, Sauternes jelly and the fig confit.
- Pour the Sauternes at 8 to 10°C in small glasses; a half bottle gives four modest pours.
- Spread the set over the festive season: one evening for duck, another for goose, and the sauce for a special main course.

Delivery and returns
We aim to process and dispatch the majority of your caviar orders same-day when placed before 3PM Monday to Thursday, and 92% of them will be delivered on the next working day.
Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.
Delivery Methods & Costs
The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.
