- Chill for three to four hours in the fridge, or 20 to 30 minutes in an ice bucket filled with ice and water, before opening.
- Once opened, seal with a Champagne stopper and keep in the fridge, finishing within a day or two.
Serving
- Serve at 7 to 9°C in a white wine glass or tulip glass, which shows the aromas better than a narrow flute.

- Pour a little first, let the mousse settle, then top up to about two thirds full.
- A classic match for caviar on blinis with crème fraîche, and just as good with smoked salmon.
- Hold the cork and turn the bottle rather than the cork for a quiet, controlled opening.
