Storage
- Keep the bottle lying down in a cool, dark, steady place, ideally a wine fridge or cellar at around 10 to 13°C.
- Leave it in its box until needed to protect it from light.
- Avoid storing it in the kitchen fridge for long periods, as the cork can dry out; chill it only in the hours before serving.
- Once opened, use a Champagne stopper and keep in the fridge, though a bottle of this quality is best finished the same evening.
Serving
- Serve a touch less cold than everyday Champagne, around 8 to 10°C, so the peach and smoky notes can show.
- Pour into a large white wine glass or tulip glass rather than a narrow flute to give the wine room.
- A 75cl bottle serves six glasses, or four more generous ones for a special dinner.
- Pair with Beluga caviar served from a mother of pearl spoon, with nothing more than a plain blini on the side.
- Open the bottle a few minutes before pouring and let the first glass breathe a little.
