- Once opened, the caviar should be eaten within 48 hours.
- Keep the orangettes cool and dry, away from strong smells, rather than in the fridge.
- Lay the Champagne down somewhere cool and dark until you are ready to chill it.
Serving
- Chill the Champagne to 7 to 9°C before opening.
- Take the caviar out ten minutes beforehand, sit the tin on crushed ice and serve with a mother of pearl or horn spoon.
- 50g is an ideal amount for two, straight from the spoon or on blinis with crème fraîche.
- Finish with the orangettes and the last of the Champagne; bitter orange and dark chocolate sit well with a dry glass.
