Storage
- Keep the tin in a cool, dry place, ideally around 15 to 18°C.
- Store well away from strongly scented foods, which can taint the chocolate.
- Do not refrigerate, as condensation can mark the chocolate and harden the ginger.
- Close the lid firmly between servings to keep the ginger soft and moist.
- Keep out of warm kitchens, sunny windowsills and cars in summer.
Serving
- Let the chocolates sit at room temperature for a while before serving so the ginger is at its softest.
- Offer them with coffee or a pot of tea at the end of a meal.
- Allow two or three pieces per person as an after-dinner chocolate.
- They sit well alongside a cheeseboard, particularly with a hard, nutty cheese.
- Pass the open tin round the table at Christmas rather than plating them, as they are quite generous in size.
