About Icelandic Land-Farmed Smoked Salmon
Smoked salmon you can enjoy with a clear conscience. Silverscale salmon is raised in contained tanks on land in Iceland, so there are no sea lice, no escapes, no pollution of the sea bed and no threat to wild salmon and sea trout. The farm runs on geothermal energy and lava-filtered water, and food waste is composted rather than dumped.
The salmon is cured with salt and a little sugar and smoked over oak. The flavour is clean and delicate with a lovely silky texture.

Storage
- Refrigerate on arrival and keep at 0 to 4°C.
- At some times of year it is sent fresh from frozen, so please do not refreeze it.
- Keep the pack sealed until needed and follow the use-by date printed on it.
- Once opened, wrap the salmon closely in cling film or baking paper and eat it within a couple of days.
- The whole side keeps best with the cut face covered, so the slices do not dry out.
Serving
- Take the salmon out of the fridge 10 to 15 minutes before serving so the texture softens and the oak smoke comes through.
- Allow about 50 to 75g per person as a starter, so a 200g pack serves three to four.
- Serve it simply with brown bread and butter, lemon and black pepper, or on blinis with crème fraîche and dill.
- For breakfast, lay it over scrambled eggs on toast.
- A glass of Champagne at 7 to 9°C or a crisp white wine suits its delicate flavour.

Delivery and returns
We aim to process and dispatch the majority of your caviar orders same-day when placed before 3PM Monday to Thursday, and 92% of them will be delivered on the next working day.
Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.

The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.

What is land-farmed salmon?

Can you freeze smoked salmon?
This salmon may be sent fresh from frozen at certain times of year, so please do not refreeze it. Keep it in the fridge and eat it by the date on the pack.
What to eat with smoked salmon?
Brown bread and butter with lemon is the classic. It is also lovely on blinis with crème fraîche, with scrambled eggs, or with a glass of Champagne.
Which size of smoked salmon should I buy?
The 200g pack (£13.30) serves three to four as a starter, the 400g pack (£26.25) six to eight, and the hand-sliced whole side of about 900g (£39.90) suits a party or a Christmas spread.
