Lumpfish (Cyclopterus lumpus)

Lumpfish Caviar 100g (Black or Red)

Premium lumpfish roe in black or red, made to add colour and texture to party food rather than to imitate sturgeon caviar. The small, firm eggs have a tight bite and a salty flavour that works well with dairy and smoked fish. Both colours come pasteurised in a 100g jar.

About Lumpfish Caviar 100g (Black or Red)

Lumpfish caviar is the caterer's secret for colour and texture on a canapé tray. It is not a substitute for sturgeon caviar, and it does not pretend to be, but this premium lumpfish roe brings a firmer, tighter texture and a contrasting salty flavour that works brilliantly alongside dairy and smoked fish.

Choose the classic black, or the red, which is particularly good in sushi and adds a bright note to a mixed platter. Both are pasteurised for a longer shelf life.

Questions

Lumpfish Caviar 100g (Black or Red): your questions answered

Anything else you would like to know? Our team is always happy to help.

Is lumpfish caviar real caviar?

No. It is the roe of the lumpfish (Cyclopterus lumpus), not sturgeon, and it does not pretend to be. It is used for its colour, firm texture and salty flavour.

What is lumpfish roe used for?

Caterers use it on canapés, sushi and garnishes. It is lovely on blinis with soured cream, on devilled eggs and with fish starters.

Does lumpfish caviar contain colourings?

Yes. The black contains E150d and E151 and the red contains E101, E120 and E160a. Full ingredients for both are listed on this page.

Which is better, black or red lumpfish caviar?

It depends on the dish. Black gives the classic caviar look, while red is particularly good in sushi and adds a bright note to a mixed platter. Both are £6 a jar.
