About Oscietra Caviar Twin Set: Uruguay v Italy

Same sturgeon, two very different caviars. Both tins in this set come from Acipenser gueldenstaedtii, yet the water, climate and craft of each farm give them quite distinct personalities. We genuinely cannot decide which we prefer, so we have put them together at a small discount and leave the verdict to you.

What is inside

  • Italian Oscietra: from a cold-water outdoor farm in northern Italy. Eggs of about 2.8mm, golden to tobacco brown, mellow and nutty.
  • Black River Imperial Oscietra: the top grade from Uruguay's celebrated Black River farm. Eggs of 3 to 3.2mm, brown to pale grey, firm and buttery.
  • Sizes: two tins of 30g, 50g, 125g or 250g

Please note the Black River caviar may arrive under a Special Reserve Oscietra label with an Imperial security seal while the producer's labelling is updated. The caviar inside is the Imperial grade.

Why does my Black River tin say Special Reserve Oscietra?

While the producer updates its labelling, the Black River caviar may arrive under a Special Reserve Oscietra label with an Imperial security seal. The caviar inside is the Imperial grade.

Is Italian or Uruguayan Oscietra better?

It comes down to taste. The Italian eggs are about 2.8mm, mellow and nutty, while Black River Imperial eggs are 3 to 3.2mm, firm and buttery. We genuinely cannot pick a favourite.

Do both caviars come from the same sturgeon?

Yes, both are from the Russian sturgeon, Acipenser gueldenstaedtii. The differences come from each farm's water, climate and craft.
