About Special Reserve Beluga Caviar (Pure Huso Huso)
This is Beluga in its purest form: caviar from the Huso huso sturgeon alone, with no hybrid in the family tree. Pure Beluga is rarely farmed because the fish take 18 to 20 years to mature, and even then there is no guarantee the roe will be any good. Plenty of examples on the market are disappointing. This one is not.
The eggs are the largest of any caviar we sell, typically 3 to 3.5mm across and a pale to mid grey. The texture is soft and yielding and the flavour is classic Beluga, all cream and gentle walnut with very little salt getting in the way. Storage
- Refrigerate the moment it arrives, keeping it in the coldest spot of the fridge at 0 to 4°C.
- Keep the tin sealed until you serve, as these large, soft eggs are at their finest when freshly opened.
- After opening, close the lid tightly, return it to the fridge and eat within 48 hours.
- Never freeze pure Beluga; the delicate eggs lose their texture once thawed.
Serving
- Lift the tin from the fridge about ten minutes ahead and sit it on crushed ice.
- Serve it on its own from a mother of pearl spoon so nothing competes with the creamy finish.
- If you want a base, choose an unbuttered blini and leave out strong garnishes.
- A glass of dry Champagne at 7 to 9°C or a shot of freezer-cold vodka is all it needs.
- Around 30g shared between one or two people makes a proper tasting.
Ingredients and allergens
Sturgeon roe (fish), salt, E285 (borax). Borax is a traditional caviar salt that helps preservation and rounds out the flavour. Contains fish.

Delivery and returns
We aim to process and dispatch the majority of your caviar orders same-day when placed before 3PM Monday to Thursday, and 92% of them will be delivered on the next working day.
Orders after 3PM on Thursday will likely be dispatched the following working day (usually Monday) so if you need your order urgently please do get in touch with us. We pack all orders with multiple ice packs to ensure they arrive fresh and chilled so don't worry if it takes an extra day to arrive.
Same-day delivery is available in some London areas.
Our caviar lasts for 3-6 months, but once opened should be consumed within 3-4 days.

The majority of our orders are delivered via Royal Mail's Tracked 24 service (up to the value of £250), with the rest going via DHL Domestic Express or Royal Mail Special Delivery.

The Huso huso sturgeon takes 18 to 20 years to mature, and even then there is no guarantee the roe will be good. That long wait is why so few farms raise pure Beluga.
